Cinnamon Banana Bread with Almond and Brown Sugar Swirl

13 Oct

My family loves this recipe and i am so glad my Dad gave me the recipe for the banana bread. But I wanted to do something different than just an ordinary banana bread. I thought what goes good with bananas; chocolate for one, but who wants chocolate banana bread again. So I love a good creamy sweet swirl and I though brown sugar and almonds would be the perfect compliment to the rich delicious banana bread.

Heres what you need:

1 3/4 flour

1/2 cup organic raw sugar

1/4 cup dark brown sugar

2 tsp baking powder

1/2 tsp baking soda

1 tbls vanilla

3 ripe bananas

1/2 tbls cinnamon

2 eggs

1/3 cup vegetable oil

For the swirl:

1/2 cup brown sugar

1/4 cup granulated sugar

1/2 tbls corn starch

1 tbls water

Heres what you do:

1. Mix together flour, sugar baking powder, baking soda, cinnamon. Slowly mix in 2 eggs and vegetable oil. Fold in mashed banana and set aside.

2. Pre-heat oven to 400 degrees F and grease a 3×9 bread dish.

3. In smaller bowl mix together ingredients for the swirl until sugar is pretty well broken down.

4. Pour small layer of batter into bread dish and add in some of the brown sugar swirl. Repeat process to get about 3 layers and a nice swirl on the top.

5. stick in oven for 35-40 minutes, until golden brown.

Yummmm that looks delicious! what a great idea. But I always try to convince myself that banana bread is healthy because it has fruit in it… there is no way I could pretend that this one is healthy! Thanks for visiting my blog and your kind comment
